Fjåk source this 70% from Bertil Åkesson's Bejofo Estate in Madagascar's Sambirano Valley — the plantation that made Malagasy cacao famous for its bright, juicy fruit — and make it with just three organic ingredients. The result is bold and unmistakably Madagascar: black cherry, citrus, and a vivid acidity that has collected gold medals across Europe.

Origin & Craftsmanship
The cacao comes from the Ambolikapiky plantation within Åkesson's 2,000-hectare organic-certified Bejofo Estate, deep in the Sambirano Valley of north-west Madagascar — an origin so distinctive that a single estate can define how a whole country's chocolate tastes. Fjåk, working from the depths of the Hardangerfjord, treat it with the reverence it deserves: only cocoa beans, cane sugar and cocoa butter, with no added lecithin and no vanilla to soften or mask the fruit. Norway's first bean-to-bar maker was built from the outset on organic, ethically traded cacao and a refusal to hide behind additives — and this bar is the clearest expression of that philosophy.

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor.
