Origin & Craftsmanship
This bar comes from McGuire Chocolate, a spirited bean-to-bar maker in Austin, Texas, known for creative flavour profiles rooted in excellent cacao. Santa Maria 70% features fine-flavour beans from the Santa Maria region of El Salvador — a growing origin celebrated for its bright, floral cocoa and lively complexity. McGuire’s small-batch roasting and careful refining let the character of this cacao shine without distraction.

Flavor Profile
At 70% cacao, Santa Maria is both expressive and balanced. First you’ll notice bright floral and citrus fruit notes, followed by smooth cocoa depth and gentle sweetness. Hints of red berries, honey, and a whisper of spice emerge as the bar matures on the palate, leading to a clean, elegant finish that invites another bite.

Tasting & Pairing Guide

Let a square melt slowly on your tongue so the floral top notes unfold before the deeper cocoa layers.
Pair this bar with a light, fruit-driven red wine like Pinot Noir or Grenache to echo its citrus and berry nuances. For a non-alcoholic option, a bergamot-infused black tea or floral oolong complements the chocolate’s aromatic qualities. Finish with dried fruit or roasted almonds to enhance texture and bring out subtle nutty undertones.

Summary

The Santa Maria 70% bar from McGuire Chocolate is a bright, elegant dark chocolate that celebrates El Salvador’s vibrant cacao character. With its blend of fruit, floral nuance, and smooth cocoa depth, it’s perfect for enthusiasts who enjoy origin-driven craft chocolate with personality and finesse.

Keep in a cool, dry place, away from direct light and strong odours. Store at maximum
18 ° C in its original packaging

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
